Nettles seem to be everywhere at the moment, but rather than avoiding their stinging leaves, why not turn them into something lovely?
The guys at Urban Fringe Dispensary near The Spark’s offices in Bristol say nettles are “a classic medicinal herb which deserves much more respect than it is given”.
They are rich in vital minerals and nutrients, including iron, calcium, potassium and magnesium.
Urban fringe advises you to wear gloves while picking just the tops of the nettles.
You then wash them in running water to flush out any insects and put them in a saucepan without adding any more water.
Cook with a lid on for 10 minutes, then chop thoroughly (they'll have completely lost their sting by now).
One serving suggestion is simply to add butter and a couple of poached eggs.
Other recipes suggest using the nettle mixture like spinach.
Urban Fringe also suggests making tea with them “for a delicious daily tonic”.

Our favourite when the nettles are cooked is to sprinkle with soy sauce, then drizzle with a little Organic Extra Virgin Olive Oil, delicious.
